INGREDIENTS (makes 4 servings):
- 1 can chickpeas (drained and rinsed)
- 1 can passata (ensure gluten free brand if required)
- Handful of kale, steams and tough ribs removed (chopped)
- 4 garlic cloves (minced)
- 1 tbsp. olive oil
- 1 tbsp. lemon zest
- 2 tbsp. grated parmesan
DIRECTIONS:
- Heat oil in a large pan over medium heat.
- Add garlic and zest and cook, stirring for 1 minute.
- Add your passata, 1 litre of water and generous pinch of salt. Cover and bring to a boil.
- Add kale and simmer for 4 minutes.
- Add chickpeas and simmer until heated through, about 2 minutes more. Serve with parmesan and lemon wedges if desired.
