Kale and Chickpea Soup Recipe

INGREDIENTS (makes 4 servings):

  • 1 can chickpeas (drained and rinsed)
  • 1 can passata (ensure gluten free brand if required)
  • Handful of kale, steams and tough ribs removed (chopped)
  • 4 garlic cloves (minced)
  • 1 tbsp. olive oil
  • 1 tbsp. lemon zest
  • 2 tbsp. grated parmesan

 

DIRECTIONS:

  1. Heat oil in a large pan over medium heat.
  2. Add garlic and zest and cook, stirring for 1 minute.
  3. Add your passata, 1 litre of water and generous pinch of salt. Cover and bring to a boil.
  4. Add kale and simmer for 4 minutes.
  5. Add chickpeas and simmer until heated through, about 2 minutes more. Serve with parmesan and lemon wedges if desired.
