Lamb Tagine Recipe

INGREDIENTS (serves 4):

600g stewing lamb (cut into chunks)

200g chickpeas (drained and rinsed)

500g chicken stock

100g couscous

1 onion (diced)

2 garlic cloves

2 tsp. of cumin seeds

½ tsp. of caraway seeds

½ tsp of cayenne pepper

2 tomatoes (roughly chopped)

1 tbsp. of olive oil

Cinnamon stick

Salt and pepper to taste

Fresh coriander to serve (optional)

 

DIRECTIONS:

Heat the olive oil in a large casserole dish. Add the onion, garlic, cinnamon, cumin and caraway seeds. Fry the ingredients for 1 minute over a medium heat.

Add the lamb and continue cooking for 3 minutes.

Add your chopped tomatoes and chicken stock. Bring the mixture to boil, reduce the heat and simmer for about 1 hour.

Add the chickpeas and cook for a further 10 mins.

In the meantime, place the couscous in a large bowl and cover with 200ml boiling water, before covering with cling film and then set it aside for 10 mins.

Taste the tagine and season with salt and pepper to taste. Serve with couscous and fresh coriander (optional).
