This recipe for our Spicy Vegan Burgers is an absolute firecracker! Whether you are vegan or not, this is a delicious meal that anybody would be lucky to eat.

Ingredients (makes 4 burgers):
- 2 medium shallots (minced)
- 3 garlic cloves (minced)
- 1 can chickpeas (drained)
- 2 tbsp. of olive oil
- 30g red kidney beans
- 30g jalapeno peppers
- 1 tsp. of cumin
- 1 tsp. of chilli powder
- Juice from 1 lime
- 1 tsp. of honey
- 30g of breadcrumbs
- Salt and pepper (to taste)
- 4 bread rolls
- 4 salad tomato slices
- 1 avocado
- 4 lettuce leaves
Directions:
- Heat a large skillet over medium heat, add 1 tbsp olive oil, shallots and garlic. Sauté until soft (about 1-2 minutes).
- Drain chickpeas and red kidney beans, add shallots and garlic mixture and use potato masher or your fork to mash the mix.
- Add remaining ingredients (jalapeno peppers, spices, lime juice, 1tbsp oil and honey and stir/mash to combine. You want it to form into a mouldable “dough.” Add more oil or lime juice if too dry, or breadcrumbs if too wet. Taste and adjust seasonings as needed.
- Divide into 4 even patties
- Heat the same skillet you used earlier to medium heat. Once hot, add 1 tbsp olive oil and cook for 3-4 minutes on each side
- Let cool for 2-3 minutes before serving (they’ll firm up as they cool).
- Sandwich the burgers on the bun with lettuce leaves, tomato slices and guacamole.
