Sweet and Sour Pork Recipe

Ingredients (serves 2):

250g pork loin (sliced into thick strips)

1 red onion (sliced)

50g mangetout

1 red pepper (sliced)

1 tsp. of honey

1 tbsp. of light soy sauce

1 tbsp. of red wine vinegar

1 tbsp. of sesame oil

Salt and pepper to taste

250g pre-cooked basmati rice

 

Directions:

Heat 1 tbsp of sesame oil in a frying pan over a high heat. Add your onions, red pepper and mangetout, and then cook for about 1 minute.

Add the pork and stir fry for 3 minutes.

Reduce the heat, add your honey and stir until well combined.

Pour the red wine vinegar and soy sauce over, and continue cooking for about 1 minute.

Serve hot with rice and fresh coriander.
