White Chocolate and Cherry Protein Flapjacks Recipe

Ingredients (makes 8 flapjacks):
240g oat flour
60g coconut flour
3 scoops LDNM vanilla protein powder
5 tbsp. of honey
35g of dried unsweetened cherries
35g of dried unsweetened cranberries
35g of white chocolate chips
60ml milk of your choice (you can use diary, oat or nut milk)
2 tbsp. of peanut butter.
Directions:
- Line a 9×9 baking dish with baking paper and set aside.
- In a large mixing bowl, combine the flours and protein powder.
- In a microwave safe bowl or stovetop combine the peanut butter and honey and heat until melted.
- Pour the wet mixture into the dry and mix well. It should be crumbly. Add dried fruits, white chocolate chips and mix until fully incorporated.
- Add milk and mix until thick firm batter is formed.
- Refrigerate for at least 2h
